Boiling times for eggs and vegetables
Broccoli florets need 3 to 6 minutes in boiling water. Large eggs need 12 minutes in the hot water after you turn off the heat. Here are the times for everyday vegetables and hard-boiled eggs, from University of Maine and Oregon State University Extension.

Vegetables in the pot
| broccoli florets | 3 to 6 min |
|---|---|
| green beans | up to 10 min |
| corn on the cob | about 4 min |
| fresh shelled peas | 5 to 10 min |
| medium potatoes, whole | about 30 to 40 min |
A gentle boil cooks as fast as a rolling one. The water is just as hot.
Hard-boiled eggs, off the heat
| cold water over eggs | at least 1 inch |
|---|---|
| bring to a full boil | lid on, heat off |
| medium eggs | 9 min |
| large eggs | 12 min |
| extra-large eggs | 15 min |
Then cool them in ice water. In the fridge: 2 days if peeled, up to a week in the shell.
